Linda and Ian McCallum-Jackson's business epitomises the base-level industries that the market set out to protect.
"The market was the starting point for our business," acknowledges the bubbly Linda. "When I met my husband he was wasting his beautifully kept pigs on the supermarkets where his pork was mixed in with everybody else's, and he was getting no credit for all the effort he put in. So we came down here instead and have built our business on the back of this market."
The amount of business they do has grown almost ten-fold in 18 months. Testimony to the taste of Havoc's `Happy Hogs' is the fact that Linda has sold out of bacon by 10.15 am. Our conversation is continually interrupted by requests for more bacon and orders for next week's market.
Best of all, says Linda, selling at the market keeps Havoc in touch with its customers so their business can tailor its pig breeding to reflect the clients' demands for meat with more taste and texture.
